A classic dessert pie made with darkly delicious blackcurrant jam. This simple yet elegant pie looks just as splendid as it tastes!
340g Duerr’s blackcurrant jam
2 tablespoons flour
1 tablespoon cornstarch
1 teaspoon lemon extract
1 pie shell unbaked
Preheat oven to 180C/ 350F/ gas mark 4.
Thoroughly mix the butter and sugar together then beat in the eggs.
Add Duerr’s blackcurrant jam, flour, cornstarch and lemon extract and mix until well combined.
Pour entire mixture into unbaked pie shell and bake for 30-45 minutes ensuring pie shell is golden brown.
Why not serve with whipped cream, vanilla ice cream or a topping of your choice.
