Apricot Jam & Sage Glazed Chicken Recipe


1 bunch sage

160g Duerr’s apricot jam

2 cloves garlic, crushed

60ml olive oil

1 tablespoon cider vinegar

Salt and pepper (to season)

1 whole chicken, cut into quarters or 4 of your favourite cuts of chicken


  1. Preheat oven to 200°C.
  2. Cut the sage leaves into small pieces, and place in a mixing bowl.
  3. Add all the other ingredients (except the chicken) to the bowl, and stir to combine.
  4. Add the chicken and toss, making sure the chicken is evenly coated with the glaze.
  5. Arrange the chicken pieces skin-side up in the pan, spaced evenly apart, in a 13”x 9” roasting dish.
  6. Roast the chicken pieces uncovered for approximately 40 minutes, until the skin of the chicken is browned and the meat is cooked through.
  7. If the chicken begins to go too dark or crisp too much, cover it loosely with foil during the cooking.
