Inspired by Beca’s Grapefruit sandwich cake on Episode One of the Great British Bake Off, we bring you a Grapefruit Tea Loaf, using the finest Duerr’s Grapefruit Marmalade. Delicious!
Serves – 12, Prep time 10 minutes, Bake time 1 hour 15 minutes
Preheat the oven to 180 C or gas mark 4. Butter a 1kg loaf tin and line with greaseproof. Set aside 1 tablespoon of Duerr’s Grapefruit Marmalade for the glaze.
In a mixing bowl, add the remaining marmalade with the softened butter, sugar, eggs, flour, baking powder and spices. Mix until smooth – about 3 to 4 minutes. Stir in the chopped walnuts.
Pour the mixture into the prepared tin and smooth the top.
Bake for about an hour and fifteen minutes until a skewer comes out clean. Cover loosely with foil if the loaf is cooking too quickly. Once cooked, gently remove from the tin and allow to cool slightly on a wire rack.
Slowly heat the marmalade set aside in a small pan with a teaspoon of water.
Once viscous, spread over the top of the warm loaf.
Cut into slices and spread with butter for a more decadent treat and serve alongside a hot cuppa!
